When you are making food for vulnerable people, it is especially important to ensure that the food you are making is safe for them to eat and will not cause them harm. Older people, immunocompromised people, or people with ongoing health conditions may be more vulnerable to food poisoning. You must follow proper food safety practices to ensure that the food you are providing is safe.
Some important points to bear in mind:
- staff and volunteers must practice good personal hygiene
- everyone must wash their hands before any food preparation commences
- cook food thoroughly
- keep hot food hot and cold food cold
- clean and sanitise as you go
- prevent cross-contamination between raw and cooked foods
